Team: School Meals Service across Hertfordshire
PURPOSE OF THE JOB
To support the Area Manager to deliver the school Meals Service and manage the kitchens of any given area in line with legislation and the Policies and Procedures of Hertfordshire Catering. To provide emergency catering and meals for transporting to other sites if required.
MAIN AREAS OF RESPONSIBILITY
Support the Area Manager in all aspects of the day to day running of any given area, ensuring constant communication is maintained. Plan and direct the preparation and service of food at meal times in accordance with the Service Level or Buy Back Agreement and with Statutory Food and Nutrient Based Standards. Deliver any special dietary, emergency and function catering as required. Plan and direct the deployment of the resources of any catering unit – food, staff, equipment and cleaning materials as may be required, so as to maximise the effectiveness of the operation.
Maintain an up to date understanding of statutory Food and Nutrient Based Standards and the make up of dishes so that this can be communicated to the customers and encourage them to make healthy choices.
Direct and manage all staff within the unit as required, including assisting in recruitment, identifying training needs and conducting appropriate on-the-job training, Performance Management and Development Scheme and first line discipline. Ensure staff are motivated and developed to their full potential. The completion of regular Quality Audits and Kitchen Checks as directed by the Area Manager. Ensure that all service staff have full knowledge of the menu regarding ingredients, cooking methods, correct portion sizes and selling prices.
Implement the operational management of Hertfordshire Catering Food Safety Policy to provide a safe and healthy environment for customers and staff in schools as set out in the Food Safety Manual. Set and monitor standards and compliance with Hertfordshire Catering Policies and Procedures, maintaining audit trail documentation. Understand and work within guidelines of Hertfordshire Catering’s Health & Safety Policy. Ensure that all kitchen staff and visitors to kitchens comply with these. Work with Area Manager to ensure satisfactory level of training has been provided to all relevant staff.
Deliver the Hertfordshire Catering Business Plan for the service and work within the set financial targets and maintain robust audit train documentation. Handle cash accurately and ensure all monies are properly accounted for. Implement Smart Card system (if required).
Ensure the effective promotion of the service both through understanding and communicating healthy eating practices to the customers as well as promoting the principles through merchandising and marketing techniques in accordance with Hertfordshire Catering’s policy. Work with the relevant Area Manager to develop and implement strategies for driving sales and improving take up.
Build a strong relationship with the School representative to ensure that the service and its development is integral to the ethos of that school. Ensure constructive and effective communication between Hertfordshire Catering and all schools at all times. May be requested on occasions to cover for staff shortages as appropriate. Within both Primary and Secondary Sectors.

This role has been identified as requiring a DBS check or Basic Disclosure. You must ensure that the appropriate form is completed and returned as requested by the Recruitment Team, as this will form a contractual requirement.
If you fail to disclose any caution, reprimand or conviction which is later identified on your DBS check you may be subject to disciplinary action and HCL has the right to suspend or dismiss you. HEALTH AND SAFETY
It will be the duty of every employee while at work to take reasonable care for the Health and safety of themselves and of other persons who may be affected by their acts or omissions at work.
The ideal candidate will be an experienced caterer with any relevant Catering qualification e.g. City & Guilds 706/1, NVQ, or equivalent experience.
They will have a sound understanding of food hygiene and health and safety regulation in relation to the provision of catering services for schools.
The will possess the ability to lead and motivate a team of staff.
They will plan and direct the preparation and service of food in accordance with the Service Level Agreement with the school and with statutory food standards, making any necessary adaptations to meet special meal requirements.
Excellent administrative and organisational skills are a must, as is the ability to manage a budget effectively and efficiently.
They may be required to attend meetings countywide and therefore should have a full driving licence and access to their own transportation.
They will have the ability to communicate fluently with customers, in accurate spoken and written English – this is essential for the post.
